V/GF Chocolate Sunbutter Cookies


Adapted from Arielle Lorre of The Blonde Files, I replaced cashew butter with sunflower seed butter because I do NOT digest cashews/almonds very well (post on that and my Viome test coming soon). These are super soft and gooey and hit the spot when you need a little sweetness after dinner or at any time of day.

1 and 1/2 cups almond flour 

3/4 cup nut butter of your choice (I used sunbutter)

1 individual unsweetened applesauce

3/4 cup coconut sugar

3 tbsp maple syrup

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp sea salt (plus extra to top after they’re cooked)

1tsp vanilla

Hu Kitchen chocolate (or chocolate of your choice, including chocolate chips if desired)
