V, GF Applesauce Pear Spiced Muffins

Here ye, here ye. Fall is here and I am HEREEEEEE for it.

To celebrate, I created these vegan, gluten free muffins because I had some ripe pears on hand and wasn’t ready to delve fully into pumpkin spice just yet.

I’ll spare you any long inspiring post about fall and new beginnings and just give you the recipe because that’s what you want, isn’t it?

Ingredients:

  • 1 cup plain unsweetened applesauce

  • 2 ripe pears, diced into small pieces

  • ½ cup coconut oil, softened

  • 1 tsp vanilla extract

  • 1/2 cup coconut sugar

  • 1 tsp. baking soda

  • ½ tsp. salt

  • 2 tsp. ground cinnamon

  • 1 tsp. ground ginger

  • 1 tsp. ground allspice

  • 1 cup gluten-free flour (I used King Arthur 1:1)

Instructions:

Preheat your oven to 350 degrees.

  1. Grease or line a muffin tin.

  2. Mix all of your wet ingredients first: applesauce, coconut oil and vanilla.

  3. Next, add in your dry ingredients: coconut sugar, baking soda, , salt, cinnamon, ginger and all spice.

  4. Finally, add in the flour. Stir until just combined, being sure to scrape the sides of the bowl.

  5. Gently fold in the diced pears

  6. Scoop evenly into 12 regular sized muffin tins.

  7. Bake 20-25 minutes, until the edges have loosened from the sides, and the tops are brown and you can stick a clean knife through them

  8. Allow to cool at least 10 min. (This is the hardest step)
